Just a start...

Since becoming a vegan, I have had to cook for myself more than ever before for fear of going hungry (and/or only nibbling leafy things all the day long), and though I haven't developed any of my own recipes yet, I have had some successes in trying out other peoples'.

Introductions

This entry will just be a filler until I get something concrete to post, but...

My name is Kelsea Little. I am a 19 year-old college student, currently studying music and literature in Southern California, and am also a brand new vegan! 

I am very happy with the change so far. I was vegetarian for about a year and a half, and recently made the switch at the new year. I feel fantastic, inside and out, and am proud to tell people that 'I am a vegan.' 

There is a lot to learn, I've found, while making the transition. I have never had to read so many labels in my life while shopping, and eating out! Don't even get me started on that. But I appreciate these challenges because they constantly force me to ask myself 'what am I putting into my body right now?' We only get one body in this lifetime, and I intend to treat mine with the utmost respect, and for me, that means not letting animal products into my system.

I also have too much respect for animals. That is another reason for the change. But I am not here to preach.

I have created this blog to share my experiences and growth as a vegan, and also to share my explorations in the exciting world of vegan cooking! This, I am most excited about. I personally love to cook and bake, and learning the vegan ways to do things is a whole new world to me. 

I have had some unbelievably outstanding, undeniably scrumptious and downright AMAZING vegan dishes in my lifetime so far, and I think it is a real shame that most people don't know just how delicious vegan eating can be. Yes, there is such a thing as healthy and tasty! Yes there is more to a vegan dinner plate than twigs and raw carrots! The culinary delights of the vegan world are, in my opinion, so wonderful that I cannot help but try and spread the word.

I aim to post a lot of lovely recipes for anyone who reads this to try out for themselves; both those I recommend and hopefully, ones I create myself!
